The human evidence is observational, meaning researchers watched what people ate and tracked outcomes, but did not run a controlled experiment. No one has yet randomly assigned humans to a Western diet, scanned their brains for inflammation, and compared results to a control group. That study has not been done.

That gap does not make the existing findings weak — it makes them incomplete. The Whitehall II data is from one cohort with one definition of an inflammatory diet. Other studies define “Western diet” differently, which makes direct comparisons harder. What no serious researcher disputes is the direction of the evidence: across species, across study types, and across decades, eating a diet high in processed food, red meat, fried food, and refined carbs consistently points toward worse brain health.
